Description

A refreshing and healthy **Wakame and Cucumber Salad** made with fresh cucumbers, wakame seaweed, and a tangy dressing.


Ingredients

Scale

2 tbsp rice vinegar

1 tbsp sake

1 tbsp soy sauce

1 tbsp mirin

1 tbsp sugar

1 tsp salt

1 tsp toasted sesame oil

1 tsp toasted sesame seeds

1 large cucumber, sliced thinly

3 tbsp dried wakame seaweed

Furikake or togarashi (optional)


Instructions

1. 1. Rehydrate the dried wakame by soaking it in warm water for 5 minutes, then drain and squeeze out excess water.

2. 2. In a large bowl, mix together rice vinegar, sake, soy sauce, mirin, sugar, salt, sesame oil, and sesame seeds.

3. 3. Add the wakame seaweed and sliced cucumbers to the bowl and toss gently.

4. 4. Let the salad sit for at least 5 minutes before serving, but up to 1 hour for more flavor.

5. 5. If desired, sprinkle furikake or togarashi on top before serving.

Notes

– For a spicier kick, try adding a bit of chili flakes or more togarashi.

– Use small Japanese cucumbers for an even crisper texture.

– This salad can be prepared ahead of time and served chilled.
