A refreshing and creamy Shrimp Cucumber Tomato Salad that combines tender shrimp, crunchy cucumbers, juicy tomatoes, and a tangy lime dressing. Perfect for summer gatherings, light lunches, or a healthy meal option that’s easy to prepare and full of flavor.
Ingredients
2 pounds shrimp, peeled and deveined
1 English cucumber, small diced
3 green onions, thinly sliced
⅓ cup mayonnaise
⅓ cup sour cream
1 large lime, zested and juiced (about 2 teaspoons zest and 2 tablespoons juice)
2 tablespoons chopped fresh dill
1 tablespoon Dijon mustard
1 garlic clove, minced
¼ teaspoon kosher salt
Instructions
1. 1. To make the dressing, stir together the mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper. Set aside or place in the fridge.
2. 2. Bring a pot of water to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and are fully cooked.
3. 3. While the shrimp is cooking, prepare an ice water bath. Once the shrimp are done, transfer them to the ice water bath for 3 minutes to cool down. Drain and chop into bite-sized pieces.
4. 4. In a mixing bowl, stir together the chopped shrimp, green onions, diced cucumber, and creamy dressing until well combined.
5. 5. Serve chilled, garnished with extra dill and lime wedges if desired.
Notes
– For an added crunch, sprinkle with sesame seeds or add some sliced avocado for creaminess.
– This salad can be made ahead by storing the shrimp, cucumber, and dressing separately, then combining them just before serving to keep everything fresh.
– You can add a pinch of chili flakes to the dressing for a touch of heat.
