For the chicken:

1 tablespoon unsalted butter

1 small onion, diced

2 garlic cloves, minced

1 cup white wine, optional

18 ounces boneless skinless chicken breasts

For the salad:

2/3 cup whole milk yogurt

1/4 cup mayonnaise

2 large shallots, minced

1/2 cup finely chopped fresh dill

1 teaspoon salt, or to taste

Freshly ground black pepper


Instructions

Poach the chicken: Heat butter over medium heat in a large, shallow pan or Dutch oven. Add the diced onion and minced garlic to the melted butter and sauté until fragrant. If you’re using white wine, pour it in, then add the chicken breasts. Pour in enough water to submerge the chicken by about an inch. Bring the liquid to a boil, cover the pan, and lower the heat to a gentle simmer. Let the chicken cook for 8 to 10 minutes, or until fully cooked. Allow the chicken to cool completely.

Shred the chicken: Use two forks to shred the chicken, then chop the shredded pieces finely, yielding approximately 2 1/2 cups of shredded chicken.

Prepare the salad: In a bowl, whisk together the yogurt and mayonnaise. Toss the mixture with the shredded chicken, then stir in the minced shallots and fresh dill. Season with salt and pepper to taste.

 

Chill: Let the salad sit in the fridge for at least one hour to allow the flavors to meld together. It will stay fresh for up to three days when stored properly in the refrigerator.
