Ingredients
1 Chilled Cucumber
8 Cherry Tomatoes
6 oz back of Spring Mix
2 Medium sized grated carrots
Balsamic Vinaigrette
Instructions
1. 1. Cut the ends off the cucumber and slice lengthwise using a mandoline.
2. 2. Slice cherry tomatoes thinly.
3. 3. Toss mixed greens with balsamic vinaigrette, using a light coating.
4. 4. Lay cucumber slices flat and add 1/2 teaspoon of grated carrots in the center.
5. 5. Layer salad leaves on top of carrots and fold cucumber slice into a wrap.
6. 6. Top with a slice of cherry tomato and a pinch of grated carrots.
Notes
– Use fresh herbs like basil for extra flavor.
– You can substitute the balsamic vinaigrette with other dressings like Italian or Greek dressing.
