A refreshing cucumber tomato shrimp salad with creamy lime dressing, perfect for any meal or as a side dish.
Ingredients
2 pounds shrimp, peeled and deveined
1 English cucumber, small diced
3 green onions, thinly sliced
⅓ cup mayonnaise
⅓ cup sour cream
1 large lime, zested and juiced
2 tablespoons chopped fresh dill
1 tablespoon Dijon mustard
1 garlic clove, minced
¼ teaspoon kosher salt
Instructions
1. Make the dressing: Mix mayonnaise, sour cream, lime zest and juice, dill, mustard, garlic, salt, and pepper.
2. Cook the shrimp: Boil shrimp for 2-3 minutes, then cool in an ice water bath.
3. Assemble the salad: Combine chopped shrimp, cucumber, green onions, and dressing.
Notes
Serve as a side or main dish. Can be customized with additional veggies or different dressings.
