Description
Cucumber and Wakame Salad is a refreshing and healthy dish that combines crisp cucumbers and savory wakame with a tangy vinaigrette.
Ingredients

2 tbsp rice vinegar
1 tablespoon sake
1 tablespoon soy sauce
1 tablespoon mirin
1 tablespoon sugar
1 teaspoon salt
1 teaspoon toasted sesame oil
1 teaspoon toasted sesame seeds
1 large cucumber, sliced thinly
3 tablespoons dried wakame seaweed
Furikake or togarashi (optional)
Instructions
1. 1. Rehydrate wakame in warm water for 5 minutes, then drain and squeeze out excess water.
2. 2. Mix rice vinegar, sake, soy sauce, mirin, sugar, salt, sesame oil, and sesame seeds in a large bowl.
3. 3. Add wakame and sliced cucumber to the bowl, toss well, and let sit for 5 minutes.
4. 4. Serve with a sprinkle of furikake or togarashi on top.
Notes
– Add grilled chicken or tofu to make this a full meal.
