About Me

Hi there! I’m Molly Carter, a 34-year-old salad whisperer from Charleston, South Carolina — or at least that’s what my sister calls me when I show up to family cookouts with something green, crisp, and full of unexpected flavor. I come from what you might call a classic American family: lots of backyard barbecues, casseroles passed down for generations, and a deep, comforting love for food that brings people together.

But somewhere along the way, I fell head over heels for cucumbers. Yes, cucumbers. Cool, crunchy, humble little cucumbers that somehow became my gateway to a whole new world of fresh, healthy, and wildly fun eating. It started simple — a little vinegar here, some sesame oil there — and suddenly I was spiralizing, pickling, tossing, and layering cucumbers into creations I never saw coming. Thai-inspired peanut cucumber salads. Watermelon-cuke combos with mint and lime. Even creamy-dreamy Greek yogurt versions that make me feel like I’m on vacation in Santorini.

I’m not a trained chef, and honestly, I think that’s why beginners feel at home here. I’ve made my share of “oops” salads — too salty, too soggy, too much garlic (is there such a thing?). But I’ve learned to laugh, adjust, and try again, because that’s how real cooking works when you’re just starting out. I believe anyone can make something beautiful and delicious — you don’t need fancy skills or rare ingredients. Just a little curiosity, a cutting board, and maybe a cucumber or two.

Now I share my favorite cucumber salad recipes with the world, hoping to inspire folks to eat a little greener, feel a little lighter, and get a little more creative in the kitchen. Whether you’re making your very first homemade dressing or experimenting with chili oil and sesame seeds, I’m right there with you — cheering you on from my sunny little kitchen.

So grab a bowl and let’s make salad magic. Trust me, cucumbers are way cooler than you think.
