Cincinnati chili: Ingredients

  • 1 kg (2 lb) lean ground beef
  • 1 large onion, chopped
  • 2 cloves garlic, chopped
  • 30 mL (2 tbsp.) olive oil
  • 45 mL (3 tbsp.) chili powder
  • 5 mL (1 teaspoon) ground cinnamon
  • 5 mL (1 teaspoon) ground cumin
  • 2.5 mL (1/2 tsp.) ground allspice
  • 2.5 mL (1/2 tsp.) ground chili pepper or to taste
  • 1 pinch cloves
  • 30 mL (2 tbsp.) white wine vinegar
  • 15 mL (1 tbsp.) English sauce
  • 750 mL (3 cups) water
  • 1 – 398 mL (14 oz.) can tomato sauce
  • 2 cans 156 mL (5.5 oz) tomato paste
  • 2 bay leaves
  • 2 cloves
  • Salt and pepper
  • Topping to taste
  • Green onions, chopped
  • Yellow cheddar cheese, grated
  • Canned red beans, rinsed and drained

Cincinnati chili: Preparation

  • In a large saucepan, brown the meat, onion and garlic in oil, crumbling the meat with a wooden spoon. Add salt. Add spices and continue cooking for about 3 minutes.
  • Deglaze with vinegar and English sauce. Add water, sauce and tomato paste, bay leaves. Bring to a boil and simmer gently for about 2 hours, stirring frequently during cooking. Remove bay leaves. Adjust the seasoning.
  • Serve chili authentically over spaghetti cooked al dente. If desired, garnish with green onions, cheese and red beans.
