Cincinnati chili: Ingredients
1 kg (2 lb) lean ground beef
1 large onion, chopped
2 cloves garlic, chopped
30 mL (2 tbsp.) olive oil
45 mL (3 tbsp.) chili powder
5 mL (1 teaspoon) ground cinnamon
5 mL (1 teaspoon) ground cumin
2.5 mL (1/2 tsp.) ground allspice
2.5 mL (1/2 tsp.) ground chili pepper or to taste
1 pinch cloves
30 mL (2 tbsp.) white wine vinegar
15 mL (1 tbsp.) English sauce
750 mL (3 cups) water
1 – 398 mL (14 oz.) can tomato sauce
2 cans 156 mL (5.5 oz) tomato paste
2 bay leaves
2 cloves
Salt and pepper
Topping to taste
Green onions, chopped
Yellow cheddar cheese, grated
Canned red beans, rinsed and drained
Cincinnati chili: Preparation
In a large saucepan, brown the meat, onion and garlic in oil, crumbling the meat with a wooden spoon. Add salt. Add spices and continue cooking for about 3 minutes.
Deglaze with vinegar and English sauce. Add water, sauce and tomato paste, bay leaves. Bring to a boil and simmer gently for about 2 hours, stirring frequently during cooking. Remove bay leaves. Adjust the seasoning.
Serve chili authentically over spaghetti cooked al dente. If desired, garnish with green onions, cheese and red beans.
